Chili

5lb coarse ground meat
4 large onions
3 green peppers
1 stalk celery
1 pack parsley
1 pack green onions
1 head garlic
4 cans tomato sauce
3 cans tomato paste
2 cans whole tomatoes
2 Tbsp chili powder
Flour
Cooking oil
Salt and pepper to taste

  1. Chop onions, peppers, celery, parsley, green onions and garlic.
  2. Make a rather large quantity of roux with flour and cooking oil.
  3. Add onions.
  4. Cook until onions are soft and transparent.
  5. Add ground meat and cook until greasy.
  6. Add seasonings.
  7. Let it cook down.
  8. Add tomato sauce, paste, and whole tomatoes.
  9. Cook for at least 30 minutes.
  10. Add water to bring to the right consistency.
  11. Add salt and pepper to taste.
  12. Cook for at least 1½ hours.
  13. Add chili powder and cook for another ½ hour.

Makes 9-10 quarts. Can be frozen.
