Oysters a la King

Fills 5 dozen small pattie shells.

  • 2 jars oysters, raw, chopped
  • 3 tbsp butter
  • 2 cups milk (substitute 1/2 cup oyster juices)
  • 1 tbsp Worcestershire sauce
  • 2 tsp ketchup
  • 2 dashes hot sauce
  • 1 close garlic (or 1/2 tsp garlic puree)
  • 1 oz chopped pimiento
  • 3 tbsp flour
  • 1 tsp mustard
  • 6 tbsp Italian bread crumbs
  • 1 tsp Kitchen Bouquet
  • 1 tsp creole mustard
  • Salt and pepper to taste

Melt butter. Add flour. Stir for 3-4 minutes. Add milk and oyster juice until mixture bubbles. Add other ingredients and cook over low heat for 20 minutes.

Put mixture in pattie shells. Sprinkle with bread crumbs. Bake at 350° until piping hot.
