Sweet Potato Pie Filling

  • 2 cups sweet potatoes, mashed
  • 1/2 block butter
  • 2 egg yolks
  • 1 cup sugar
  • 4 tbsp condensed milk

Boil fresh sweet potatoes. Mash two cups of the potato and add butter while potatoes are still hot. Mix two egg yolks gradually with the sugar. Blend potato/butter and egg/sugar mixtures while adding condensed milk. Pour into an unbaked pie shell. Bake at 375°F until crust is brown.
