True Grit Breakfast Pizza

Can be prepared the evening before; also freezes well.

1 9.5" deep-dish frozen pie shell, thawed, or homemade pizza crust
1/2 lb pork sausage
1 cup evaporated milk
3 eggs
1/2 cup instant grits or cream of wheat
1/2 tsp salt
1/2 cups grated cheddar cheese

  1. Preheat oven to 425°.
  2. Shape pie shell or pizza crust into a pizza crust, leaving a 1/2" standing rim so filling does not run over.
  3. Brown sausage. Drain well.
  4. Spoon sausage over pizza crust.
  5. In large mixing bowl, combine milk and eggs. Beat well.
  6. Stir in grits or cream of wheat, salt and cheese. Pour into crust.
  7. Bake for 17-20 minutes or until the filling is set.
