Crabmeat Dip

1 Tbsp cooking oil
1 Tbsp flour
1 can cream of mushroom soup
1 onion, chopped
1 can crab meat or equivalent fresh crab meat
1 cloves garlic, minced
1/4 bell pepper, chopped
1 stalk celery, chopped

  1. Make a roux with the oil and flour, stirring until brown.
  2. Add cream of mushroom soup, onion, garlic, bell pepper, and celery.
  3. Stir thoroughly.
  4. Add crab meat and continue stirring.
  5. Serve as an appetizer with potato chips, Ritz crackers, etc.
